Ingredients:
1/4 cupUnsweetened orange juice
2 tbspUnsweetened pineapple

1 tspMinced cilantro leaves
1/4 tspSalt
4 (4 oz) chicken breast
-halves, skinned
3/4 cupFinely chopped pineapple
2 tbspChopped red bell pepper
1 Jalapeno pepper, seeded and
-chopped
2 tbspMinced cilantro leaves
1 1/2 tspWhite wine vinegar
1 tspUnsweetened orange juice
1/2 tspPepper
-Pineapple leaves as
-garnish
Procedures:
1Combine first 4 ingredients in a shallow dish; mix well.
2Add chicken, turning to coat.
3Cover and refrigerate chicken for several hours, turning occasionally.
4Combine pineapple, bell pepper, jalapeno, cilantro, vinegar, and orange juice in a small bowl; mix well.
5Let mixture stand at room temperature for 2 hours.
6Remove chicken from dish, reserving marinade.
7Sprinkle chicken with pepper.
8Grill chicken 4 to 5 inches from coals 15 minutes or until done.
9Turning and basting frequently with reserved marinade.
10To serve, top each breast with 3 tablespoons pineapple mixture.
11Garnish with pineapple leaves.
