Ingredients:
1 lbsPORK TENDERLOIN
2 eachSMALL CLOVES GARLIC
2 tbspDRIED SAGE
2 tspOLIVE OIL
1 eachSALT & PEPPER TO TASTE
Procedures:
1Line pan with foil.
2Preheat pan to 400 deg f.
3Remove as much fat as possible from pork.
4Mix together the garlic and sage.
5With a sharp knife, make deep incisions in pork and insert a little spice mix into each cut.
6Brush meat with olive oil and place on baking tray.
7Bake for 25 minutes or until meat thermometer reaches 160 deg f.
8Remove pork and cover with foil.
9Let stand for 10 minutes.
10Slice and serve over lentils
