Ingredients:
2 largeSkinless boneless chicken
Breast -- ? pieces
2 ea Potato -- peeled, ?d, LW
6 largeGarlic clove -- minced
3/4 cupLow sodium chicken broth --
Canned
1/2 cupOlive oil
1/2 cupLemon juice -- fresh
2 tspOregano -- dried, crushed
Salt and pepper -- to taste
Procedures:
1Preheat oven to 400°F.
2Arrange chicken, potatoes and garlic in a 9 x 13 glass baking dish.
3Season with salt and pepper.
4Pour broth over.
5Whisk olive oil, lemon juice and oregano to combine.
6Pour evenly over chicken and potatoes.
7bake until chicken is cooked through and golden brown, and potatoes are tender, basting occasionally with pan juices, about 30-35 minutes.
