Ingredients:
4 1/2 lbsCourse ground pork
1 1/2 lbsSalt pork
1 Clove garlic
1 Onion, quartered
1 1/2 tbspFreshly ground black pepper
2 tbspSalt
4 tbspPaprika
4 tspFennel
2 tbspCrushed red pepper, dried
1/4 tspThyme
1/2 tspBay leaf, crushed
1/2 tspCoriander
1 cupRed wine
Procedures:
1Combine all ingredients, mix well and stuff into hog casing.
2You may split lengthwise and broil under medium heat, or pan fry until brown on all sides and well done
