Ingredients:
1/2 cupCornstarch in ?c. water
3 lbsChicken, in chunks
1/4 cupSoy sauce
1 1/2 tspGinger, minced
1 tspWhite pepper
1 1/2 tspGarlic, minced
1 Egg
1/2 cupSoy sauce
1 cupCornstarch
1/4 cupWhite vinegar
1 cupOil
1/4 cupCooking sherry
2 cupGreen onions, sliced
1 1/2 cupChicken broth, hot
16 smallDried hot peppers
3/4 cupSugar
Procedures:
1To make sauce: add garlic, ginger, sugar, soy sauce, vinegar and sherry.
2Then add broth and stir until sugar disolves.
3Refrigerate until needed.
4in a seperate bowl mix chicken, soy sauce and pepper.
5Mix in egg.
6Add cornstarch until chicken is coated evenly.
7Add oil to help seperate the pieces.
8Divide chicken in small quantities and deep fry at 350 until crispy and light brown.
9Drain on paper towels.
10place a small amount of oil in a wok and heat until just hot.
11Add onions and peppers and stir fry briefly.
12Stir sauce and add to wok.
13Add chicken and cook until sauce thickens.
14Add water or cornstarch if needed.
