Procedures:
| 1 | Wash fryer pieces; pat dry with paper towels. | | 2 | Combine flour, salt and pepper in large plastic bag. | | 3 | Shake pieces to coat well. | | 4 | Heat oil in large 12-inch skillet over medium-high heat. | | 5 | When hot, add chicken pieces, being careful not to crowd pan. | | 6 | (it may be necessary to cook chicken in batches). | | 7 | Decrease heat to medium. | | 8 | Cook, uncovered, until well browned on underside, about 15 minutes. | | 9 | Use tongs to turn. | | 10 | Cook, uncovered, until browned on underside, about 12-15 minutes. | | 11 | Transfer chicken to double-thickness of paper towels to blot excess fat. |
