Ingredients:
2 tbspVegetable oil
15 smallDried red chilies
3/4 lbsChicken breast, boned

1 smallOnion, peeled, cut into

1 tbspFish sauce
1 tspSoy sauce
1/2 tspSugar
1/2 cupDry-roasted, salted cashews
Procedures:
1Heat wok over medium heat, add oil.
2Add chilies and stir fry 1 minute.
3They should blacken but not burn.
4Remove with slotted spoon and set aside.
5Inrease the heat to med-high , add the chicken and stir fry until cook through, about 2 minutes.
6Add the onion and stir fry 1 minute.
7Add fish sauce, soy sauce and sugar and continue frying 1 minute.
8Add the cashews and reserved chilies and stir well.
9Transfer to a platter and serve hot or warm.
