Ingredients:
6 eachLG. chicken breast --
Skinned
5 eachFrench or Italian bread *
1 eachStick unsalted butter
1 eachEgg
1 tspOil
1 tspWater
1/2 tspSalt
Fresh ground pepper
Flour
Lemon wedges
Procedures:
1Make the bread crumbs in a food processor and shake through a strainer onto a soup plate using the fresh bread.
2Mix th egg, oil, water, salt and pepper together in a small bowl.
3Place the flour on a large piece of wax paper or in another soup bowl.
4Cut each chicken breast horizontally.
5Dip each piece of chicken in the flour.
6Shake off excess flour then brush one side of the chicken with the egg mixture.
7Set the brushed side down in the bread crumbs and sprinkle crumbs on the top.
8In a large skillet, melt 1 stick unsalted butter.
9Add chicken.
10Cook until golden brown about 3 to 4 minutes and turn.
11Cook another 4 minutes.
12Serve withe lemon wedges...
