Oriental hazelnut chicken

Ingredients:
1 1/2 lbsBoneless chicken breasts
-(skinless)
4 tbspSherry
2 1/2 tbspSoy sauce
1 1/2 tspSugar
1/2 cupCornstarch
1 largeEgg, well beaten
1/2 cupButter
1 cupHalved Oregon hazelnuts
-- coarsely chopped
1 tspFinely chopped fresh ginger

1 medGarlic clove, minced
- (?tsp. garlic powder)
1/2 cupHot water
8 ozCanned sliced bamboo shoots
-- drained
Cooked rice or linguine
Procedures:
1Cut chicken breasts into bite-sized pieces.
2Combine marinade of sherry, soy sauce and sugar and pour over chicken.
3Marinate overnight or a minimum of 1 hour.
4Drain chicken, reserving the marinade.
5Dredge chicken in cornstarch, dip in beaten egg, place on a cake rack covered with wax paper and let dry for 30 minutes.
6Saut?hazelnuts in butter for 5 minutes; remove with slotted spoon.
7Add chicken to skillet and saut?with ginger and garlic until golden brown on both sides.
8Add marinade, bamboo shoots and hot water to chicken.
9Cover and simmer 10 minutes.
10Add hazelnuts and serve over a bed of rice or linguine.
