| | Game hens, about 1 | | | -pound each | | 1
| tbsp | Five-spice powder | | 2
| tbsp | Hoisin sauce | | 1
| tbsp | Plum sauce or duck sauce | | 2
| tbsp | Black bean paste | | | -or chili sauce w/garlic | | 1
| tbsp | Sherry | | | Salt to Taste | | 1
| tbsp | Maple Syrup | | 1/4
| cup | Dark soy sauce |

Procedures:
| 1 | Wash hens and pat dry. | | 2 | Mix five-spice powder, hoisin, plum sauce and black bean paste and sherry. | | 3 | Rub cavities of game hens with half of this mixture, and skins with the other half and salt. | | 4 | Refrigerate overnight. | | 5 | preheat oven to 350 °F. | | 6 | Mix soy sauce and maple syrup and rub into the skins. | | 7 | Roast back up for 30 minutes, then turn breasts up and roast another 30 minutes or until golden brown. | | 8 | Serve with pan juice. |
