Ingredients:
4 xChicken breasts, skinned

Lime, juice only
2 clGarlic, crushed
X Black pepper, to taste
1/2 tspCumin
3 Scallions, chopped
1 medRed bell pepper
1 medYellow bell pepper
1 medGreen bell pepper
8 xWhole-wheat tortillas
1 tbspVegetable oil
1 tbspWater
2 tspTo 3 tsp jalapeno peppers

X Salt, to taste
X Fresh cilantro, chopped, to

1 medTomato, diced
X Salsa, to taste

Procedures:
1Slice the chicken into chunks about ?inch square.
2Place them in a large bowl.
3Squeeze the lime juice over chicken.
4Add the garlic, scallions, black pepper, and cumin, and toss to mix.
5Slice the bell peppers into strips and set aside.
6Wrap the tortillas in a thin, clean dishcloth, place them on an ovenproof plate, and put the plate in the oven.
7Warm the tortillas at the lowest setting on your oven while preparing the fajita mixture.
8Heat the oil and water in a large saucepan over medium heat and add the chicken, bell peppers, and jalapeno peppers.
9Add the greater amount of jalapeno if you like your food very spicy.
10Saute, stirring frequently, until the chicken and vegetables are cooked through, about 25 minutes.
11Add salt to taste.
12Spread a spoonful of the fajita mixture in a thick line in the middle of each tortilla.
13Top with cilantro, tomato, and salsa to taste.
14Roll up the tortillas and serve.
15Makes 4 servings of 2 fajitas each.
