Ingredients:

| oz | Butter | | 3
| tsp | Redcurrant jelly | | | Fresh Parsley to Garnish | | | FOR THE STUFFING | | 1/2
| oz | Butter | | 1
| small | Onion, Peeled, Finely Chopped | | 2
| oz | Mushrooms, Finely Chopped | | 2
| oz | Smoked Ham, Finely Chopped | | 1
| oz | Fresh White Breadcrumbs | | 3
| tsp | Chopped Fresh Parsley | | 3
| | Eating Apples | | 3
| tsp | Lemon Juice | | | Salt and Black Pepper |

Procedures:
| 1 | Preheat oven to 190c, 375°F, gas mark 5. | | 2 | to make stuffing, melt butter in a pan and fry onion gently, until softened, but not browned. | | 3 | Stir in mushrooms and cook or 2 to 3 minutes. | | 4 | Remove pan from heat and stir in ham, breadcrumbs and parsley. | | 5 | Core one apple and grate coarsely. | | 6 | Stir into stuffing mixture and add lemon juice. | | 7 | Season to taste. | | 8 | loosen breast skin of chicken and spoon stuffing mixture underneath, smoothing down evenly. | | 9 | place chicken in a roasting tin and brush lightly with oil. | | 10 | Roast bird for about 1 and a half hours, or until juices run clear when pierced through breast. | | 11 | If chicken begins to overbrown, cover with foil. | | 12 | core and slice remaining apples and saute in butter until golden. | | 13 | Stir in redcurrant jelly until melted. | | 14 | Garnish chicken with apple mixture and parsley. |
