Ingredients:
2 sliceWhite bread
1 smallOnion
1 lbsTurkey, ground
1 packChopped spinach, thawed
1 tspSalt
1/4 tspPepper
1 largeEgg
3 Carrots, med. size.
1/4 lbsMushrooms
1 Jar Spaghetti sauce, garden>
Style.
Cooked spaghetti for 4 serv.
Procedures:
1Preheat oven 400°F.
2Grease or spray 13 x 9 inch baking pan.
3Chop the bread until fine crumbs form (abt.
41 cup).
5Grate onion for 1 tbs.
6In large bowl, mix bread crumbs and grated onion with ground turkey, spinach, salt, pepper, and egg.
7shape turkey mixture into 16 meatballs.
8Place meatballs in pan and bake 25 minutes or until meatballs are lightly browned and cooked through.
9meanwhile, thinly slice carrots and cut mushrooms into ? pcs.
10In 3 quart saucepan over high heat, heat carrots, mushrooms, pasta sauce, and ?cup water to boiling.
11Reduce heat to low; cover and simmer 20 minutes.
12When meatballs are done, add to sauce; cover and simmer 10 minutes longer to blend flavors and cook vegetables until tender.
13Serve over spaghetti or rice.
