Ingredients:
1 cupChopped onion
1 Clove garlic, crushed
2 tbspFlour
2 1/4 cupChicken broth
1/4 tspSugar
Black pepper to taste
1 Med. Bell pepper, diced
3 tbspOil
1 canTomato paste ( 6 oz.)
1/2 tspSalt
1/4 tspTabasco sauce (or to taste)
2 cupCooked, cubed, chicken
Procedures:
1Saute onion, green pepper and garlic in oil until tneder, stirring occasionally.
2Add flour, stir just until flour starts to brown.
3Stir in tomato paste, broth, salt, sugar and tabasco sauce.
4Cook and stir until mixture comes to boil and thickenes.
5Stir in chicken and black pepper.
6Simmer uncovered 5 minutes or until chicken in heated through.
7Serve over hot cooked rice.
