| 1 | Ingredients: 1 (2 to 3 lb). |
| 2 | Broiler-fryer chicken (cut up) salt and pepper (to taste) hot oil |
| 3 | season chicken with salt and pepper. |
| 4 | Combine flour and red pepper; set aside. |
| 5 | Combine egg and milk; dip chicken in egg mixture;then dredge in flour mixture, coating well. |
| 6 | Heat 1 inch of oil in a skillet; place chicken in skillet. |
| 7 | Cover and cook over med. heat about 30 mins. |
| 8 | Or until golden brown; turn occasionally. |
| 9 | Drain on paper towels. |
