Ingredients:

| tsp | Olive oil, divided | | 1
| lbs | Italian turkey sausage | | 1
| | Egg, beaten (or substitute) | | 1
| | Lemon peel, grated | | 6
| tbsp | Italian bread crumbs | | 2
| cup | Plain tomato sauce | | 3
| | Basil leaves, chopped | | 1
| pinch | Fresh minced oregano | | 4
| slice | Part-skim mozzarella cheese |

Procedures:
| 1 | Spray large non-stick skillet with cooking spray and add 1 teaspoon of the olive oil. | | 2 | Combine turkey sausage with egg and lemon peel; mix lightly. | | 3 | Sprinkle bread crumbs on shallow plate. | | 4 | Shape ?of meat mixture into flat patty and press into crumbs, lightly coating both sides. | | 5 | Make 3 more coated patties with remaining meat and crumbs. | | 6 | Brown patties in skillet over moderate heat, for about 2 to 3 minutes. | | 7 | Add remaining teaspoon of oil and turn to brown other side evenly. | | 8 | Mix tomato sauce with herbs. | | 9 | Top each with sauce and a slice of mozzarella. |
