2 largeLemons
1 1/2 cupSugar
3 medEggs
Procedures:
1Grate rind of lemons, then, squeeze lemons.
2Melt butter in top of double boiler.
3Add juices and rind.
4Stir over hot water until sugar dissolves.
5Beat eggs lightly and add to butter mixture.
6Cook over simmering water, stirring constantly til thick.
7Ladle into jars and process in boiling water for 10 minutes (opt).
8Or refrigerate.
