One-skillet: chicken and spinach with white beans

Ingredients:
3 tspExtra-virgin olive oil
1 1/2 lbsChicken breasts
2 Celery stalks, minced
4 Garlic cloves, minced
2 Shallots, minced
15 ozTomatoes, canned, diced
1 tspFresh rosemary, or
- ˝ts dried rosemary
1 tbspCornstarch
1 cupChicken broth, defatted
15 ozCannellini, canned
12 ozSpinach - fresh
Salt
Black pepper, fresh ground
10 Black olives - brine cured
Procedures:
1Preparation time = 25 minutes cannellini are white kidney beans.
2Drain and rinse before use.
3Wash fresh spinach thoroughly and chop.
4Chicken breasts should be skinned and de-boned and cut into bite-size pieces.
5Heat 2 ts oil in large nonstick or cast-iron skillet over medium-high heat.
6Add chicken and saut?until firm and white, not pink, about 3 minutes.
7Remove from skillet and keep warm.
8Reduce heat to medium and add remaining 1 ts oil.
9Add celery, garlic and shallots and saut?until limp and fragrant, about 5 minutes.
10Add tomatoes and rosemary and simmer minutes.
11Dissolve cornstarch in chicken broth and add to skillet.
12Bring to boil and cook until sauce is thickenedd.
13Add cannellini beans and chicken; heat through.
14Just before serving, add spinach to skillet and toss until wilted, about 3 minutes.
15Season with salt and pepper.
16Garnish with chopped olives.
17Serve at once.
