| 1 | Although this is a one-serving recipe, quantities can be increased. |
| 2 | Do not multiply spice quantities - use your taste to get the desired flavours. |
| 3 | Chicken breasts should be skinned and de-boned and cut into strips. |
| 4 | The pinches of spices should be generous although taste is the guage. |
| 5 | Guacamole :- mash all ingredients together. |
| 6 | Make ahead or make and let stand while preparing fajitas. |
| 7 | Heat oil in skillet over medium heat. |
| 8 | Add chicken to skillet and sprinkle seasonings. |
| 9 | Stir fry for 4 minutes until cooked and slightly golden brown. |
| 10 | Set aside and keep warm. |
| 11 | Save ?the chicken for later in the week. |
| 12 | Slice the vegetables and add to the skillet with the garlic. |
| 13 | Stir fry 3 minutes until tender. |
| 14 | Return half the chicken to the skillet. |
| 15 | Combine a drop of tabasco and lemon juice and drizzle over the chicken. |
| 16 | Heat through. |
| 17 | Microwave tortillas on high for 1 minute. |
| 18 | Spoon fajita mixture onto tortilla, roll up and serve garnished with sour cream, salsa and guacamole. |
