Garlic eggplant

Ingredients:
1 1/2 lbsEggplant, cut into
1/2 "cubes
1 largeOnion, chopped
IN A BOWL, MIX TOGETHER
2 tbspSoya sauce (or tamari)
2 tspSesame oil (optional)
1/3 cupWater
1 tspSugar
POUR IN HEATED WOK
3 tbspOlive oil (or veg broth)
8 Cloves minced garlic
1 tbspChili paste with garlic (or
Plain chili paste)
1/2 tspMinced ginger (I usually use
More than this)
Procedures:
1Cook for a few seconds, stirring constantly.
2Add eggplant and onions.
3Pour liquid mixture over eggplant and toss.
4Add more water so that liquid measures ?way up the mixture.
5When eggplant is tender, uncover and cook until most of the remaining sauce has evaporated.
6Serve with rice.
