Idaho potato ham-cheese salad supreme

Ingredients:
1/2 cupVegetable oil
1/4 cupWhite wine vinegar
1/4 cupChopped fresh parsley
2 tbspDijon-style mustard
2 tbspMinced fresh shallots
1/2 tspSalt
1/4 tspPepper
3 Fresh Idaho potatoes
-baked
1/4 cupCoarsely chopped walnuts
1 tspButter or margarine
-Lettuce leaves
1/2 lbsCooked ham, cut into
-julienne strips
1/4 lbsSwiss cheese, shredded
Procedures:
1In jar with tight-fitting lid combine first seven ingredients.
2Cover; shake until thoroughly combined.
3Cut potatoes into l-inch pieces; arrange in shallow dish.
4Pour 1/? cup of the dressing over the potatoes, stirring gently to coat well.
5Set aside 30 minutes or until potatoes have absorbed most of the dressing.
6In 10-ounce microwave safe custard cup place walnuts and butter.
7Cook on high 1 to 2 minutes or until lightly toasted, stirring once.
8To serve; line platter with lettuce.
9Arrange potatoes on lettuce .
10Toss remaining dressing with ham and cheese.
11Spoon over potatoes; sprinkle with walnuts.
12Makes 4 servings
