Ingredients:
1 2/3 cupFlour
1 tspFlour
1 1/2 ozUncooked yellow corn meal
1 tbspBaking powder
3/4 lbsApples, cored, pared, finely
Chopped..wt before cutting
1/2 cupCorn, thawed frozen
2 1/4 ozCheddar, reduced fat, shredded
1/3 cupSugar
1 dashCinnamon
1 dashNutmeg
1/3 cupCorn oil
2 tspCorn oil
3 Eggs, lightly beaten
Procedures:
1Preheat oven to 400°F.
2Line 12 muffin pan cups with paper baking cups.
3In large bowl combine flour, cornmeal, and baking powder.
4Add apples, corn, cheese, sugar, cinnamon, nutmet, stirring to combine.
5In small bowl, beat eggs and oil; stir into flour mixture (do not overbeat...the mixture will be stiff).
6Fill baking cups and bake in center of oven for 15 minutes.
7Makes 12 muffins.
