Tofu manicotti

Ingredients:
8 xManicotti shells
1/2 cupFinely chopped Onion
1 tspDried Italian seasoning
10 ozTofu, drained
2 tbspGrated Parmesan Cheese
2 tbspFlour
1/2 cupShredded lo-fat Cheddar chee
1/2 cupChopped fresh Mushrooms
1 tbspSnipped fresh Parsley
1/8 tspPaprika
Egg White, slightly beaten
1 1/4 cupSkim Milk
1/8 tspGarlic powder
Procedures:
1Cook pasta shells according to package directions.
2Rinse in cold water; drain.
3Spray a med skillet with pam.
4Add mushrooms and onion; cook till tender.
5Stir in parsley, italian seasoning, and paprika.
6Cool slightly.
7Mash the tofu in a bowl.
8Stir in egg white, parmesan cheese, and mushroom and onion mixture.
9Stuff each manicotti shell with about ?cup of the tofu mixture.
10Arrange stuffed shells in a 12x7x2" baking dish.
11For sauce, in a med saucepan combine milk, flour, garlic powder, ?t salt, and 1/8 t pepper.
12Cook and stir till thickened and bubbly.
13Pour sauce over pasta in baking dish.
14Bake, covered, in a 350 deg f. oven for 20-25 minutes or till heated through.
15Sprinkle with cheddar cheese, or mozzarella cheese if desired.
16Bake, uncovered, 2 minutes more or till cheese is melted.
