Tangerine hens

Ingredients:
4 Cornish game hens
4 Tangerines, peeled
-seeded, & chopped
1 cupFresh squeezed orange juice
1/4 cupZinfandel wine
1 tspOr salt to taste
4 tbspButter
1/4 cupMinced onion
1/4 cupMushrooms chopped
4 tbspPecans chopped
1 tspSoy sauce
1 Clove garlic minced
1 tbsp* honey
Procedures:
1*note: optional rinse hens and pat dry.
2Mix wine, soy sauce, salt, honey & orange juice together.
3Rub 1 tblpsn butter inside each hen.
4Sprinkle the cavity with salt.
5Mix the onion, garlic, pecans, mushrooms, & tangerines together.
6Stuff each hen with this mixture.
7Heat the liquid mixture until it begins to boil.
8Turn off & let cool for 5 minutes.
9Pour 2 tblspns of this into each hen.
10Preheat oven to 325 °F then bake hens for 45 minutes.
11Be sure to baste every 10 minutes with the liquid mixture.
12Test birds...if not done....cook until done.
13**note** i have used this same thing on chickens too as well guinea hens.
14All came out well as did the quail i used it with.
