1 tspGround cinnamon
1/4 tspGround nutmeg
1/4 tspGround ginger
1 Egg
2 tbspVegetable oil
1/4 cupRaisins
1/4 cupChopped walnuts
1/3 cupLowfat milk
8 ozCan uns. crushed pineapple
1 1/2 cupGrated carrots
Procedures:
1Combine the dry ingredients in a bowl.
2Add the remaining ingredients and stir to blend.
3Spoon into oiled muffin tins or paper muffin cups.
4Bake at 350°F for 20 to 25 minutes.
