Buttermilk mayonnaise

Ingredients:
1/2 tspGranulated gelatin
1 tbspCold water
1/2 tspDry mustard
1/4 tspSalt
Few grains freshley ground
-pepper
1 tbspWater
1 cupButtermilk, made from skim
-milk
2 tspGreen onion, finely chopped
2 tspParsley, minced fresh
Procedures:
1Soak gelatin in 1 tb cold water.
2Dissolve over hot water.
3Mix together mustard, salt, pepper, and 1 tb water until smooth.
4Combine all ingredients except parsley and blend well.
5Chill until it begins to ticken.
6Beat gently untill smooth; stir in parsley.
7Turn into a jay and cover.
8Chill serveral hours.
