Ingredients:
3 lbsChicken, cut up
2 tbspOil
3 Eggs
1 1/2 cupMilk
1 tbspOil
1 1/2 cupAll-purpose flour
3/4 tspSalt
1 tspDried, crushed tarragon
1 can(10 ?oz) condensed cream
- of chicken soup
1/2 cupMilk
1 can(4-oz) mushroom stems and
-pieces, drained
2 tbspSnipped parsley
Procedures:
1Brown chicken pieces in the 2-tb.
2Of hot oil; season with a little salt and pepper.
3Place chicken pieces in a well-greased 13x9x2-inch baking dish.
4in mixing bowl beat eggs; blend in the 1 ?cups milk and 1 tb oil.
5Stir together flour, salt, and tarragon.
6Add to egg mixture; beat till smooth.
7Pour over chicken.
8Bake, uncovered, at 350 till done, 55 to 60 minutes.
9meanwhile, in saucepan stir together soup, the 1/3 cup milk, mushrooms, and parsley.
10Heat through, stirring occasionally.
11Pass sauce with chicken.
