Ingredients:
1 8 oz can tomato sauce
1/2 cupPicante sauce
1 tspGround cumin
1/2 tspGarlic salt
1/2 tspOregano, crushed
2 Whole chicken breasts
-boned, skinned and split
Salt and pepper as desired
2 medOnions, cut into ? wedges
2 tbspVegetable oil
2 cupZucchini, cut into ?
-cubes(about 1 medium
-zucchini)
Procedures:
1Source: mainpoul.zip combine tomato sauce, picante sauce, cumin, garlic salt and oregano; mix well.
2Cut chicken into 1" pieces; sprinkle with salt and pepper.
3Cook chicken and onions in oil in large skillet over medium heat, stirring frequently, until chicken is lightly browned and almost cooked through, about 5 to 7 minutes.
4Stir tomato sauce mixture into skillet; mix well.
5Stir in zucchini.
6Cover and simmer 5 minutes.
7Uncover; cook and stir about 1 minute to thicken sauce, if necessary.
8Serve with additional picante sauce.
9Serves 4.
