Ingredients:
2 tbspOlive oil
1 cupSliced scallions
2 Garlic cloves, crushed
1/8 tspHot pepper sauce
4 medTomatoes, peeled, seeded
-chopped
1 tbspRed wine vineagr
1 Bay leaf
1/2 tspGround cloves
1/2 tspWorcestershire sauce
1/8 tspGround saffron (optional)
1/8 tspFreshly ground pepper
2 lbsSkinless, boneless chicken
-breast halves
Procedures:
1In a large frying pan, heat oil over medium heat.
2Add scallions and cook until lightly browned, about 3 minutes.
3Add garlic and hot pepper sauce; cook 1 minute.
4Add tomatoes, vinegar, bay leaf, cloves, worcestershire, saffron, and pepper.
5Bring to a boil, reduce heat, and simmer uncovered for 15 minutes.
6Place chicken on top of sauce, cover, and simmer 15 to 20 minutes, until chicken is tender and opaque.
