Ingredients:

| large | Chicken, deboned | | 1
| large | Onion | | 2
| | Carrots | | 1
| | Green pepper | | 2
| cup | Chicken stock | | 1
| can | Pineapple (drained) 16 oz. | | 1/3
| cup | Vinegar | | 1/4
| cup | Soft brown sugar | | 1
| tbsp | Soy sauce | | 1
| tbsp | Sherry | | 2
| tbsp | Cornstarch | | | Salt and pepper |

Procedures:
| 1 | Cut up chicken into chunks and boil until done, or can be cooked in the microwave oven. | | 2 | Cut the onion, pepper, and carrot into wedges. | | 3 | Drop these into a small saucepan of boiling water and cook for 5 minutes. | | 4 | Drain well. | | 5 | Mix together in a small saucepan the cornstarch, chicken stock, vinegar, sugar, soy sauce and sherry. | | 6 | Bring to a boil, stirring constantly, and simmer for 2 or 3 minutes. | | 7 | Add the vegetables to the sauce, then add the chicken and pineapple and reheat. | | 8 | Salt and pepper to your liking. | | 9 | Serve very hot over rice or chow mein noodles. |
