Ingredients:

| large | Onion, chopped | | 1
| large | Green pepper, chopped | | 3
| | Cloves garlic, minced | | 1/4
| cup | Olive oil | | 1
| large | Fresh tomato | | | -or ?cup canned | | | - crushed tomatoes | | 1
| lbs | Ground beef | | 1/4
| cup | Spanish olives w/pimiento | | 1/4
| cup | Dark raisins | | 2
| tbsp | Capers | | 2
| cup | Raw white rice | | 3 1/2
| cup | Chicken stock | | 1/4
| cup | Slivered almonds | | 1/4
| cup | Dry spanish sherry | | | Salt and pepper to taste |

Procedures:
| 1 | In a large skillet saute onion, pepper and garlic in olive oil. | | 2 | Add tomato and cook slowly until well blended. | | 3 | Brown meat in same skillet and cook slowly with olives, raisins, and capers. | | 4 | Meanwhile, cook rice in stock until done. | | 5 | Mix rice with other ingredients to form a moist,but not wet, stuffing. | | 6 | Season with salt and pepper. | | 7 | Stuffs a 12-15 pound turkey. |
