Picadillo stuffing

Ingredients:
1 largeOnion, chopped
1 largeGreen pepper, chopped
3 Cloves garlic, minced
1/4 cupOlive oil
1 largeFresh tomato
-or ?cup canned
- crushed tomatoes
1 lbsGround beef
1/4 cupSpanish olives w/pimiento
1/4 cupDark raisins
2 tbspCapers
2 cupRaw white rice
3 1/2 cupChicken stock
1/4 cupSlivered almonds
1/4 cupDry spanish sherry
Salt and pepper to taste
Procedures:
1In a large skillet saute onion, pepper and garlic in olive oil.
2Add tomato and cook slowly until well blended.
3Brown meat in same skillet and cook slowly with olives, raisins, and capers.
4Meanwhile, cook rice in stock until done.
5Mix rice with other ingredients to form a moist,but not wet, stuffing.
6Season with salt and pepper.
7Stuffs a 12-15 pound turkey.
