Ingredients:
1 tbspButter or margarine
1 canPeach slices (29 oz size)
1 largeOnion -- chopped
3 tbspFlour
2 Garlic cloves -- minced
1/2 tspOregano
1 cupCelery -- minced
1 tspSalt (optional)
3/4 cupCarrots -- shredded
1/4 tspPepper
1 canTomato sauce (8 0z)
1 Broiler-fryer (3-?lb)
1 1/2 tbspBrown sugar
Cut into small pieces
1 tbspTarragon vinegar
3 tbspOil
1 1/2 tspChili powder
Procedures:
1Drain peaches reserving one cup syrup.
2Combine flour, oregano, salt (optional) and pepper.
3Dredge chicken in flour mixture, brown in oil and place in a casserole.
4Saute onion, garlic, celery, and carrot in remaining oil.
5Blend in remaining ingredients including reserved syrup.
6Pour over chicken.
7Bake uncovered at 350 degrees about 35-40 minutes.
8Add peach slices and bake 10 minutes more or until chicken is tender.
