2 xLarge PEI Potatoes
4 xLarge Carrots
2 xMedium Onions
1 tspOregano
1 tspThyme
1 tspRosemary
1 tspPaprika
1 tspParsley
1 tspGarlic Powder
1/4 cupOlive Oil
1 dashCayenne Pepper
Procedures:
11) combine all seasonings.
2Cut vegetables into large chunks.
32) put chicken breasts in casserole dish.
4Surround with vegetable chunks.
5Brush olive oil generously on all poultry and vegetables.
63) sprinkle spices on chicken only.
7Bake covered in a 350°F oven approximately 1 hour.
8Uncover and continue to bake until vegetables are crispy and the potatoes/chicken are browned.
