Ingredients:
1 lbsDitalini or Orzo
-OR other small pasta
-shape, uncooked
4 ozCooked turkey ham
- diced into ?inch cubes
1/2 cupSwiss cheese
- diced into ?inch cubes
3 Celery stalks, chopped
3 Scallions, sliced
1/2 cupDiced red onion
1/4 cupDiced black olives
Salt
Freshly ground pepper
1/4 cupDijon mustard
2 tbspVegetable oil
1/4 cupWhite wine vinegar
Procedures:
1Prepare pasta according to package directions; drain, rinse with cold water and drain again place the pasta, turkey ham, cheese, celery, scallions, onion and olives in a mixing bowl.
2Season with salt and freshly ground pepper to taste.
3In a small bowl, mix the mustard, vegetable oil and vinegar until combined.
4Add to the pasta and toss.
5Refrigerate for two hours and serve chilled.
6Serves 6 to 8 each serving provides: 242 calories; 11.5 g protein; 33.9 g carbohydrates; 6.9 g fat; 12.6 mg cholesterol; 479 mg sodium.
