Passover glazed chicken with matzo-nut stuffing

Ingredients:
1/3 cupShortening
1/3 cupOnion, minced
1/3 cupCelery, finely chopped
1 canCondensed clear chicken soup
1/3 cupAlmonds, chopped
1/2 tspSalt
1 Egg
1/8 tspPepper
1 tbspOrange rind, grated
4 Matzos, broken
GLAZE
1 cupOrange juice
2 tbspOrange rind grated
1/4 cupHoney
1/4 cupShortening
Procedures:
1Saute onion, celery and nuts in shortening until vegetables are tender.
2Add broken matzos and toast lightly.
3Combine salt, pepper, egg, soup and rind in large bowl.
4Add matzo mixture and mix well.
5Fill a 4 lb. chicken and place bird on a rack in an open roasting pan with breast side down for first ?of roasting time.
6Combine ingredients for glaze and pour over chicken.
7Bake in slow oven, 325°F., for abt.
82-2 ?hrs.
9Or until browned and tender.
10Baste often.
