Ingredients:
1 1/2 lbsLean ground beef
1 largeOnion, chopped
1 tspGarlic, minced
1 tspSeasoned salt
1 packChili seasoning mix
1 lbsCan of tomatoes
1 1/2 cupCooked whole kernel corn
- drained
3 1/4 ozCan pitted black olives
- drained
1 cupYellow cornmeal
1 tspSalt
2 1/2 cupCold water
1/4 cupChopped canned pimiento
1 cupShredded cheddar cheese
Procedures:
1Brown ground beef in skillet, breaking up meat with fork.
2Add seasonings and tomatoes; simmer 5 minutes.
3Stir in corn and olives.
4Combine cornmeal, salt and water; cook, stirring, until thick.
5Add pimento.
6Line greased, shallow 2-quart baking dish with part of cornmeal mush.
7Pour in beef mixture and make a border of remaining mush around edge of baking dish.
8Bake at 350°F about 40 minutes.
9Sprinkle with remaining cheese and bake 5 minutes longer
