Ingredients:
2 1/4 cupWater
2 1/4 cupDry rice
1 1/2 lbsBoned chicken breasts, split
1 medOnion, sliced
2 tbspButter or margarine
10 1/2 ozCan condensed cream of
-chicken soup
8 ozCan stewed tomatoes
2 tspPaprika
1/2 cupSour cream
Procedures:
1Bring water to a boil in a saucepan.
2Stir in rice.
3Cover; remove from heat.
4Let stand 5 minutes.
5meanwhile, cook chicken and onion in hot butter in a skillet until chicken is lightly browned and onion is tender.
6Remove from skillet and set aside.
7Stir soup, tomatoes and paprika into skillet bring to a boil.
8Return chicken and onion to skillet.
9Reduce heat; cover and simmer 5 minutes or until chicken is fork tender.
10Stir in sour cream and heat through.
11Serve over cooked rice.
12makes 6 servings.
