Ingredients:
2 cupBrown rice (not instant)
4 cupWater
1 ea Large onion, chopped
6 ea Stalks, celery, chopped
2 each14 ?oz can stewed or
Seasoned tomatoes
2 tbspButter or margarine
1 tbspItalian seasoning
2 tspSugar
1 lbsCubed ham
4 each16 oz cans black-eyed peas
Drained
Procedures:
1Cook onion and celery in butter until tender.
2Add rice and water, bring to boil, reduce heat and simmer (covered) for 45 minutes.
3Add remaining ingredients and cook in slow oven (225°F) for 1-2 hours.
4Enjoy with cornbread for good luck as your first meal on new year"s day!!
