Spanish black bean soup

Ingredients:
2 lbsBlack beans
2 tspSalt
2 medOnions, chopped
4 medGreen peppers, cut into
-chunks
6 Garlic cloves, mashed
2 tbspOregano
6 Bay leaves
1/2 cupOlive oil
2 tbspWine vinegar
Procedures:
1Wash beans; place in a large pot and cover with water.
2Add salt and soak overnight.
3Early the next day add onions, green peppers, garlic, oregano and bay leaves.
4Bring to a boil and reduce heat to simmer.
5Simemr on low heat all day, stirring often.
6When beans are medium soft add olvie oil.
7Cook until thick and beans are done.
8At this point you may add more salt, if desired.
9With a fork, remove green pepper skins and bay leaves.
10Serve over rice.
11Serves 4 to 6.
12note: fresh chopped onions are usually sprinkled over black beans.
13This freezes well.
14Reheat on very low heat.
