Ingredients:

| lbs | Black beans | | 2
| tsp | Salt | | 2
| med | Onions, chopped | | 4
| med | Green peppers, cut into | | | -chunks | | 6
| | Garlic cloves, mashed | | 2
| tbsp | Oregano | | 6
| | Bay leaves | | 1/2
| cup | Olive oil | | 2
| tbsp | Wine vinegar |

Procedures:
| 1 | Wash beans; place in a large pot and cover with water. | | 2 | Add salt and soak overnight. | | 3 | Early the next day add onions, green peppers, garlic, oregano and bay leaves. | | 4 | Bring to a boil and reduce heat to simmer. | | 5 | Simemr on low heat all day, stirring often. | | 6 | When beans are medium soft add olvie oil. | | 7 | Cook until thick and beans are done. | | 8 | At this point you may add more salt, if desired. | | 9 | With a fork, remove green pepper skins and bay leaves. | | 10 | Serve over rice. | | 11 | Serves 4 to 6. | | 12 | note: fresh chopped onions are usually sprinkled over black beans. | | 13 | This freezes well. | | 14 | Reheat on very low heat. |
