Southwestern meatball soup

Ingredients:
3/4 lbsGround Beef
3/4 lbsGround Pork
1/3 cupUncooked long grain Rice
Egg, slightly beaten
1 tspDried Oregano
1 dashSalt & Pepper, to taste
Med Onion, peeled & minced
Clove garlic, crushed
2 tbspSalad Oil
1/2 cupTomato paste
10 cupBeef Bouillon
1/2 cupChopped fresh coriander
Procedures:
1Can substitute parsley for coriander, if neccessary.
2Combine beef, pork, rice, egg, oregano, 1 teaspoon salt and ?teaspoon pepper (or to taste) in a large bowl.
3Shape into small balls, about the size of golf balls.
4Saute onion and garlic in heated oil in a large kettle until tender.
5Mix in tomato paste.
6Add bouillon; season with salt and pepper.
7Bring to a boil.
8Add meatballs and reduce heat.
9Cook slowly, covered, about 30 minutes, until meatballs are cooked.
10Stir in coriander or parsley.
11Serves 6 to 8.
