Ingredients:
2 cupPlums pitted, chopped
1/2 cupHoney
1/4 cupLemon juice
2 tbspOnion, minced
1 tspLemon zest, grated
1/2 tspFresh ginger root
1/4 tspSalt
1/4 tspCloves, ground
1/4 tspAllspice
Salt and pepper, to taste
Procedures:
1Combine all ingredients in a medium saucepan, bring to boil, reduce heat an simmer for 15 min. or until plums are completely cooked.
2Puree mixture in a blender or food processor.
3Taste and adjust sweetness, adding more honey if nessary.
4Return to saucepan and simmer for 5 min
