Ingredients:
2 lbsBeef sirloin tip roast
- cut into ?inch cubes
1/2 tspPepper
3 cupChopped onion
64 ozCanned tomatoes with juice
-- chopped
3 Garlic cloves, minced
48 ozCanned pink or pinto beans
-- drained
2 tbspVegetable oil
14 ozRoasted red bell peppers
- drained, rinsed & chopped
2 tbspChili powder
3 1/2 cupBeef broth
2 tbspGround cumin
1/4 cupMolasses
1/4 tspGround cloves
2 tspCider vinegar, to taste
1 tspSalt
1 tbspTabasco
Procedures:
1Seasoned with a hint of tabasco, molasses and cider vinegar, this soup has a special flavor and assembles quickly.
2Brown beef, onion and garlic in oil in dutch oven over medium heat.
3Stir in chili powder, cumin, cloves, salt and pepper.
4Add tomatoes, beans, peppers, broth, molasses and tabasco.
5Simmer over low heat for 1 ?hours, partially covered, stirring occasionally.
6Stir in vinegar and serve.
7Serving suggestion: sourdough bread and vegetable relishes..
