Ingredients:

| cup | Orange juice | | 3
| tbsp | Lemon juice | | 1/4
| cup | Water | | 1
| | Egg, well beaten | | 2
| tsp | Orange rind, grated | | 2
| tsp | Butter |

Procedures:
| 1 | Combine sugar, flour, and salt in top of double boiler; add fruit juice, water, and egg, mixing thoroughly. | | 2 | Place over boiling water and cookr 10 minutes, stirring constantly. | | 3 | Add orange rind and butter. | | 4 | Cool. | | 5 | Makes enough filling to spread between two 9-inch layers (generously), or between three 10-inch layers. |
