Ingredients:
1/2 lbsLean ground beef
1 Onion, chopped
1 cupCelery, chopped
1 cupCarrot, chopped
1/2 cupSweet green pepper, chopped
1/4 cupRaisins
28 ozCanned beans
- [2x14oz cans]
14 ozCanned tomatoes, diced
-undrained
2 tbspChili powder
1/4 tspHot pepper flakes
1/2 tspSalt
1/2 tspPepper
CORNMEAL CRUST
2/3 cupAll-purpose flour
1/3 cupCornmeal
1 tspBaking powder
1/2 tspSalt
1 tbspButter, softened
1/4 cupCheddar cheese, shredded
1 Egg
1/2 cupSkim milk
1 tspFresh parsley, chopped
- or ?ts dried
Procedures:
1In large nonstick skillet or saucepan, brown beef over medium-high heat, breaking up with back of spoon, about 8 minutes.
2Drain off fat.
3Add onion, celery, carrot, green pepper and raisins; cook for 5 minutes.
4Add beans, tomatoes, chili powder and hot pepper flakes; cover and simmer for 30 minutes.
5Stir in salt and pepper.
6Spoon into deep square 12-cup casserole.
7Cornmeal crust: in bowl, mix together flour, cornmeal, sugar, baking powder and salt.
8Cut in butter until mixture is crumbly.
9Mix in cheese.
10Beat egg with milk and stir into flour mixture just until blended.
11Spread evenly over chili.
12Sprinkle with parsley.
13Bake in 375f 190c oven for about 25 minutes or until crust is golden brown.
