Ingredients:
3/4 cupSundried tomato bits
1/4 cupYellow corn meal
3 largeCloves garlic minced
3/4 cupBoiling water
1 1/2 lbsLean ground beef
2 Eggs
2/3 cupChopped green onions
1 cup4 oz. green chiles (mild)
Diced
1/3 cupChopped fresh cilantro
1 Jalapeno pepper chopped
Seeded (optional)
1 1/2 tspSalt
1/4 tspPepper
Procedures:
1In large bowl, mix tomato bits, corn meal, garlic and water, set aside 10 minutes.
2Add remaining ingredients.
3Mix with hands to blend thoroughly.
4In shallow baking pan or dish form a loaf with meat mixture.
5Sprinkle with small amt.
6Of corn meal bake 375°F. for 1 hr or until juices run clear.
7Let stand for 10 minutes before slicing.
