Ingredients:
7 lbsRhubarb (abt. 6 quarts)
-- leaves removed
-- stalks trimmed
-- cut in pieces
1 lbsDried figs
-- cut in fine shreds
11 cupSugar
1 cupMixed candied fruit peel
-- chopped
Procedures:
1Mix rhubarb, figs and sugar in an earthenware crock or large jar.
2Cover and let stand all night.
3The next day, boil the mixture for at least an hour, or until very thick.
4Add the candied peel before the mixture is taken off the heat.
5Pour jam into warm jars and cover.
6Process.
7Yield: about 9 pints.
