Ingredients:
2 1/2 lbsCountry style pork ribs
3 tbspAll-purpose flour
1/2 tspGarlic powder
2 tbspButter or margarine
4 eachMedium potatoes, sliced
1/2 tspSalt
1/4 tspBlack pepper
1/4 cupChopped onion
1/4 cupChopped green pepper
3/4 cupMilk
1 can(16 0z) cream style corn
1 eachFresh tomato, diced
2 eachGreen onions, thinly sliced
Procedures:
1Dust ribs with flour and sprinkle with garlic powder.
2Brown in heated butter in a heavy skillet.
3Layer potatoes in a lightly oiled 13 x 9 baking dish.
4Sprinkle with salt, black pepper, onion and green pepper.
5Pour milk over vegetables.
6Cover with the corn and top with the browned ribs, covering vegetables in a single layer.
7Cover and bake at 350f for 30 minutes.
8Remove cover and bake 30 minutes longer or until ribs are tender and potatoes are done.
9Before serving, sprinkle with tomato and green onions.
10*tips: you can substitute pork chops for the ribs.
11Can be made ahead, except for the baking, cover and refrigerate
