Ingredients:
1 1/2 lbsFlank steak fat trimmed
3/4 cupOrange juice
3 tbspSoy sauce
2 tbspCreamy peanut butter
1 1/2 tbspJulienne s, iced orange peel
2 Minced small garlic cloves
1 1/2 tspCurry powder
1/2 tspRed wine vinegar
1/4 tspCrushed red pepper
1 tbspPeanut/vegetable oil
2 medGreen bell peppers cut into
-?inch wide strips
2 tbspChopped scallions
Peeled sections of
- 2 oranges
Procedures:
1Diagonally cut beef, against the grain, into slices ?inch thick by 4 inches long.
2In bowl, combine orange juice, soy sauce, peanut butter, orange peel, garlic, curry, vinegar and red pepper.
3Stir to blend.
4Add beef; toss to coat evenly.
5Cover; set aside to marinate 2 hours at room temperature or refrigerate overnight.
6Heat oil in deep skillet or wok over high heat.
7Add beef mixture.
8Cook and stir 2 minutes.
9Remove beef from skillet with tongs or slotted spoon.
10Add green peppers to skillet; cook and stir about 5 minutes until browned around edges.
11Stir in scallions and return beef to skillet.
12Cook and stir 1 minute more.
13Garnish with orange sections.
