Ingredients:
4 To 6 Chinese pancakes
3 Eggs, beaten
1/4 cupMushrooms, sliced
1/4 cupChinese mushrooms, sliced
3/4 cupPork, shredded
1 cupShredded fresh cabbage
1/2 cupBamboo shoots, sliced
1/2 cupCarrots, grated
1/4 cupWhite onion, shredded
1/2 cupSpring onions, chopped
2 Cloves garlic, finely
-chopped
1 cupSoy sauce
1 tbspSesame oil
1 tspPepper
1 tspSzechwan peppers
2 cupSoy oil for frying
Procedures:
1Heat soy oil in deep skillet to very hot.
2Pour in pork and stir-fry 4 minutes.
3Add beaten eggs and stir-fry for one additional minute.
4Add all fresh vegetables, except fresh garlic and spring onion, and stir-fry 2 additional minutes.
5Remove from skillet, drain thoroughly and reserve.
6In same heated skillet, place garlic and spring onions.
7Add soy sauce, pepper, szechwan pepper and sesame oil.
8Stir and return reserved reserved pork and vegetables to skillet.
9Over hot flame, stir ingredients 1 or 2 minutes an pour on serving platter.
10On serving platter, put mou-shu pork into steamed chinese pancakes, folding pancake over mixture.
11Fills 4 to 6 pancakes.
