Ingredients:
1 tbspVegetable oil
1 1/2 tspSesame oil
1 eachGarlic clove, crushed
1/4 cupMinced leeks*
1/2 tspMinced red peppers
4 medMushrooms, sliced
1/2 cupWater
1 1/2 tspSake (optional)#
2 1/2 tspSoy sauce
1/2 tspSalt
1 dash7-spice red pepper+
1 1/2 tspTomato ketchup
1 packExtra firm silken tofu
2 tspCornstarch
2 tbspWater
1 tbspMinced scallions
Procedures:
1Heat a wok & coat with the oils.
2Add garlic, leeks & red peppers.
3Stir fry over high heat for 15 seconds.
4Reduce heat to medium, add mushrooms & saute for 1 minute.
5Add water, sake, soy sauce, salt, 7-spice pepper & ketchup.
6Bring to a boil & cook for 30 seconds.
7Add tofu & return to a boil.
8Dissolve cornstarch in water & stir into the wok.
9Simmer until thick.
10Garnish with scallions.
11* or use minced scallions or onions # i substituted a sherry + i used ?ts of crushed chilies shurtleff & aoyagi, "the book of tofu"
